
Want to elevate pasta night to 5-star Italian restaurant quality? Making your own pasta at home is easier than you think — and the flavor is unbeatable. Homemade pasta is richer, more satisfying, which leaves us eating smaller portions compared to store-bought.
With just four basic ingredients found in every kitchen, you can make pasta from scratch. I’ll show you two methods: the traditional hand-rolled version and my favorite (faster!) way using the KitchenAid® pasta roller and cutter attachments.
Homemade Pasta Recipe
Ingredients
- 3 ½ cups all-purpose flour
- 4 large eggs
- 1 tsp salt
- 1 Tbsp olive oil
Instructions The Traditional Way (By Hand)
- On a clean countertop surface, combine flour and salt. Make a well in the center, add eggs and olive oil. Mix until a rough dough forms.
- If the dough is too dry, add water 1 tablespoon at a time until it just comes together. No crumbs, but not sticky.
- Knead until the dough is smooth. Cover and rest for about 10 minutes to 1 hour.
- Roll out as flat as needed, then cut into strips or shapes using a pizza cutter, pastry cutter, or sharp knife.
To Cook:
- Bring salted water to a boil. Cook pasta for 2–3 minutes (fresh pasta cooks much faster than dried). Drain and serve with your favorite sauce.
To Store:
- Lay pasta on a drying rack or dish towels until fully dry (1–2 days).
- Once dry, transfer to freezer bags and store in the freezer for up to 3 months. Cook directly from frozen.
Rolling stiff dough by hand and cutting noodles with a knife is definitely possible, but I’ll be honest — it’s a workout. It can take over an hour, make a huge mess, and doesn’t always yield the prettiest noodles. After a few rounds, I told my family I was done making pasta this way. (They were sad.)

Now, here’s how I make pasta in just 20 minutes, start to finish:
Instructions the Easy Way: KitchenAid® Pasta Roller & Cutter
- Add ingredients to the stand mixer bowl. Mix with the dough hook until the eggs are incorporated.
- Finish kneading by hand right in the bowl until it is no longer crumbly (no flour mess all over the counter, yay!). Let rest a few minutes.
- Attach the pasta roller, then run golf-ball sized dough balls through until it reaches the desired thickness.
- Switch to the cutter attachment, feed pasta sheets through, and voilà — perfect, pretty noodles every time.
Cleanup? Practically nothing. The roller and cutter stay clean, so I pop them back in the box. No floury counters, no sticky fingers and knives. Just a bowl and dough hook to clean and fresh pasta, ready to cook or dry.
Why I’ll Never Go Back
Homemade pasta night used to feel like a chore. Now it’s fun, fast, and delicious. Investing in the KitchenAid® attachments was worth every penny — we haven’t bought boxed pasta since!
